Serves: 5 or 6 (However the quantities can be increased easily to make in bulk)
Ingredients:
- 600 Grams packet of frozen sweet potato chunks
- 50 Grams of creamed coconut (or 1 x 400ml can of coconut milk)
- 2 cloves of garlic (chopped)
- 700 ml of boiling water
- 2 chicken stock cubes
- Dried chilli flakes
- Salt & Pepper
Method
Simmer the sweet potato in chicken stock (water + stock cubes) until it is soft (20 minutes or so)
Add the coconut (Creamed or canned) and the chopped garlic
Add a pinch of chilli flakes
Continue to simmer until sweet potato is mushy and the soup is frothy
Blend until smooth (If it is too thick then consider adding regular milk or water to slacken it off)
Season to taste
Possible additions: Tabasco sauce, Lime juice
