Tomato and Pepper Soup

Tomato and Pepper soup - A nice and simple recipe but very delicious. This is a loose guide, as it's easy to adjust quantities etc to suit your personal taste

Ingredients

  • 1 Onion diced
  • 2 Red Peppers chopped
  • 400g tin of chopped tomatoes
  • 3 Cloves of garlic crushed
  • 1 Teaspoon of mixed herbs
  • 1 Vegetable stock cube
  • Tomato puree
  • 400ml water
  • Milk
  • Salt & Pepper to taste
  • Tabasco sauce*

Method

Fry the onion for a few minutes, add the garlic, fry for a few more minutes, then add the peppers and the chopped tomatoes, water (boiled), stock cube, herbs, and one squirt of tomato puree

Simmer for 25 minutes

Blend with a stick blender to a desirous consistency

Stir in milk to loosen as it should be a little bit thick

Add salt and pepper

*Top tip!: You can make this soup deliciously spicy with the addition of several drops of tabasco sauce! In addition, a pinch of MSG adds an extra oomph of flavor!
