Ingredients
- 1 Onion diced
- 2 Red Peppers chopped
- 400g tin of chopped tomatoes
- 3 Cloves of garlic crushed
- 1 Teaspoon of mixed herbs
- 1 Vegetable stock cube
- Tomato puree
- 400ml water
- Milk
- Salt & Pepper to taste
- Tabasco sauce*
Method
Fry the onion for a few minutes, add the garlic, fry for a few more minutes, then add the peppers and the chopped tomatoes, water (boiled), stock cube, herbs, and one squirt of tomato puree
Simmer for 25 minutes
Blend with a stick blender to a desirous consistency
Stir in milk to loosen as it should be a little bit thick
Add salt and pepper
*Top tip!: You can make this soup deliciously spicy with the addition of several drops of tabasco sauce! In addition, a pinch of MSG adds an extra oomph of flavor!
