Creamy Mushroom Soup

A bowl of mushroom soup

Serves: 6

Ingredients

  • 400g Mushrooms
  • 1 Onion
  • 2 Garlic cloves
  • 1 Vegetable stock cube
  • 400ml water
  • Butter
  • Vegetable Oil
  • Salt and Pepper
  • Milk

Method

Dice the onion and fry it in a little oil + a knob of butter for 3 or 4 minutes until translucent
Add chopped garlic and fry for another couple of minutes
De-stalk and dice the mushrooms and fry with the onion and garlic until the mushrooms have collapsed
Add in the water (boiled) and the stock cube, stir, and simmer for 25 minutes
Blend with a stick blender, the soup should be pretty thick, so add milk until the soup has the desired consistency. It can easily take an additional 200ml or more of fluid.
Season with salt and pepper

*Top tipAdd a teaspoon each of onion powder and garlic powder when you add the water, this boosts the flavor. For even more flavor add a pinch of MSG at the end!
