Potato and Leek Soup

Potato and Leek soup - A very simple but very tasty soup recipe if you have a spare potato and a spare leek
A bowl of potato and leek soup

Serves: 4

Ingredients

  • 1 onion (diced)
  • 1 Leek (chopped finely)
  • 1 Large potato (diced)
  • 2 garlic cloves (chopped)
  • 1 teaspoon of mixed herbs
  • 500 ml of boiling water
  • 1 vegetable stock cube
  • Salt and Pepper

Method

Fry the onion in oil until translucent, then add in the garlic and fry a minute more. Add in the leek, mix in, and fry for a few minutes longer so the veg sweats

Pour the water in and break the stock cube into the pot, stir in the mixed herbs

Add the potato to the pot

Simmer the soup for 20 minutes, then with a stick blender blend it well, it will turn creamy due to the starch in the potato

Season with salt and pepper

*TipWhile the soup is cooking you can add a teaspoon each of garlic powder and onion powder to add more flavor. In additional, a pinch of MSG will give even more flavor!
